Skate Wing with Tomato Relish
Skate Wing

1 pound skate wing
2 tbs olive oil
2 cloves garlic, minced
salt and pepper to taste
flour for dredging
For Tomato Relish
1 large beefsteak tomato, diced
1 Tbs fresh tarragon, minced
1/2 red onion, minced
1/2 cup Kalamata olives, pitted, sliced
1 – Tbs olive oil
Salt and pepper to taste
Mix tomato, fresh tarragon, onion, olives, olive oil, salt and pepper in a large bowl, mix and let sit in refrigerator for at least an hour. Just before you begin to prepare the skate wing, remove the relish from the refrigerator and bring to room temperature.
Marinate skate wing in olive oil and garlic for about an hour. Remove from marinade, dredge in flour, then fry in a hot pan for about 3 minutes, or until browned, flip and fry the other side.
Serve skate wing with tomato relish.
