Quick Kale Salad
If you’re not used to Kale, try this flavorful salad — adding kale to salads adds nice texture and crunch, along with a lot of health benefits.
4 leaves of Kale, ribs removed, diced
4 leaves of red leaf lettuce, torn
2 – 4 red radishes, sliced
1 carrot, diced
1/2 of a small summer squash, sliced thin
1/8-cup red onion, diced
1 – 2 fresh tomatoes, sliced
4 strips of bacon, diced
sea salt and cracked pepper to taste
Dressing:
1/4- cup olive oil
1 tablespoon balsamic vinegar
1 tsp white wine mustard
1 tsp dried tarragon
salt and pepper to taste
Mix all salad ingredients together in a large bowl, salt and pepper to taste. Mix together the dressing ingredients and add to salad at the last minute.
